Dr. Lustig's work is showing that obesity and weight gain are caused by high levels of insulin. High levels of insulin prevent your brain from receiving the STOP signal from your fat cells. When you have eaten enough to satisfy your body's needs, the extra gets stored in fat cells. When the fat cells are receiving extra calories for storage, they send a signal called Leptin to your brain. The brain reads the Leptin and sends a message to your body that it is not hungry and that it feels good, feels energetic, and wants to move, that it has energy to burn. In this way, your brain and body controls your weight and energy level to stay fit and trim.
When your brain cannot see Leptin, it sends the message that your body is hungry and tired, that it has low energy and better not do anything. It makes you feel lousy. You cannot lose 10 pounds or lose 20 pounds, because your body is working so hard to preserve reserves for the famine it thinks it's in. Dr. Lustig's finding that high insulin levels cause your brain to be blind to Leptin. So fructose may not raise your blood sugar levels after eating it, but over time, your liver's insulin receptors fail, more insulin is produced, your cells become insulin resistant and you get diabetes, your brain cannot see Leptin, you eat more and exercise less, and you get high cholesterol.
